Try something different with this crunchy apple and cabbage salad.
- Soak cranberries in apple juice for 1 hour. Drain, reserving juice. Heat butter in a frypan over medium heat, add apple and toss for 2-3 minutes or until golden.
- Place in a bowl with cabbage, parsley, nuts and cranberries. Add reserved juice to pan and cook for 1-2 minutes over high heat to reduce by half. Whisk juice together with vinegar, mustard and oil, then season and toss through salad.
