This smokey, spicy and citrussy salad makes the perfect lunch or light dinner.

  1. Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.
  2. Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
