Try this delicious and extremely nutritious turkey and wild rice salad.

  1. Cook wild rice in a large saucepan of boiling water following packet directions. Drain well. Set aside to cool.
  2. Meanwhile, cook snow peas and asparagus in a saucepan of boiling water for 2 minutes or until tender crisp. Refresh under cold running water. Drain well.
  3. Use a rolling pin or meat mallet to pound the turkey breasts slightly. Spray a large non-stick frying pan with olive oil and heat over medium-high heat. Cook turkey for 3-4 minutes each side or until golden and cooked through. Slice.
  4. Whisk together the lemon juice, oil and honey in a small bowl. Set aside. Place the cooked rice, snow peas, asparagus, watercress, chives and blueberries in a large bowl. Toss gently to combine.
  5. Divide salad between serving plates.Top with turkey. Drizzle with the dressing and sprinkle with the lemon zest.
