Sweet honey walnut dressing tastes sensational on this elegant summer salad.

  1. To make the honey walnut dressing, heat the oil in a large frying pan over medium heat. Add the walnuts and cook, stirring, for 1-2 minutes or until lightly toasted. Transfer the oil and walnuts to a heatproof jug and set aside for 10 minutes to cool. Add the vinegar and honey, and whisk with a fork until well combined. Taste and season with salt and pepper.
  2. Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 4-5 minutes each side or until golden and cooked through. Transfer to a plate and set aside for 5 minutes to rest. Thinly slice the chicken across the grain. Add the grapes to the pan and cook, tossing, over medium heat for 5 minutes or until heated through.
  3. Meanwhile, cook beans in a saucepan of boiling water for 3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well.
  4. Arrange the chicken, beans, grapes, lettuce and blue cheese on serving plates. Drizzle with the honey walnut dressing and serve immediately.
