Cooking Soups Kale loaf

Enjoy a slice of this gluten-free loaf with avocado for breakfast, or dunked in soup.

  1. Preheat oven to 180C/160C fan forced. Grease a 9.5 x 19.5cm loaf pan. Line with baking paper.
  2. Finely process baby kale in a food processor. Combine kale, almond meal, baking powder and salt in a bowl. Whisk eggs, oil, lemon juice and honey in a jug. Add to kale mixture. Stir.
  3. Spoon into prepared pan. Bake for 45-50 minutes or until a skewer inserted comes out clean.
