- Heat oil in a medium saucepan, cook onion for 1-2 minutes.
- Add cauliflower, lentils and Campbell’s Real Soup Base Malaysian. bring to the boil. Reduce heat and simmer, covered, for 15 minutes or until cauliflower and lentils are tender.
- Remove from heat. Use a stick blender to puree the soup until smooth.
- Ladle soup into bowls. Serve topped with fried shallots and coriander.
