Eggs, beetroot, bacon, cheese, tomato - when we say this burger has the lot, we mean it!

  1. Preheat oven to 160°C. Line a baking tray with non-stick baking paper. Place the beef mince, onion, breadcrumbs, parsley, egg, salt and pepper in a bowl. Use clean hands to mix until well combined. Shape the mixture into 6 patties.
  2. Heat 1 tablespoon of the oil in a large nonstick frying pan over a medium heat. Add the patties and cook for 4-5 minutes each side until cooked through. Transfer to the lined tray and top each patty with a slice of cheese. Place the patties in the oven for 4-5 minutes or until the cheese melts.
  3. Meanwhile, heat the remaining oil in the pan over a medium heat. Add the bacon and cook for 3-4 minutes or until crispy. Drain on paper towel. Crack the eggs into the pan and cook for 2-3 minutes until bases are crisp.
  4. Toast the buns and top the bases with the lettuce, beetroot, tomato, bacon, beef patties and egg. Place on the bun tops and serve.
