This quick and easy lunch idea will give you energy to help you through the working day.

  1. Preheat jaffle maker. Spread 2 slices of bread with ricotta. Top with spinach. Place, filling side up, in jaffle maker. Break egg over filling. Sandwich with remaining bread.
  2. Cook for 4 to 5 minutes or until toasted and egg just set. Serve.
