  1. Heat 2 tablespoons oil in a large frying pan over high heat. Add mushrooms and cook, tossing, for 5 minutes or until tender. Add tomatoes and cook, tossing, for 2 minutes or until tomatoes begin to break down. Add spinach and remove from heat.
  2. Cook Latinaβ„’ Fresh Lasagne Sheets in a large saucepan of boiling water for 1 minute or until tender. Drain well.
  3. Meanwhile, combine ricotta and basil in a small bowl. Season with salt and pepper.
  4. Place a pasta sheet on each serving plate. Spoon over half the mushroom mixture and dollop with half the ricotta mixture. Continue layering with remaining pasta, mushroom mixture and ricotta mixture, finishing with a pasta sheet. Sprinkle with shaved parmesan (or vegetarian hard cheese) and drizzle with remaining oil. Serve immediately.
