Swamp juice

Cooking Coctails Swamp juice

Get the party started with this pre-historic style swamp juice.

  1. Place jelly crystals in a large heatproof bowl. Add boiling water. Whisk until crystals have dissolved. Stir in 200ml cold water. Allow to cool for 30 minutes.
  2. Place glucose syrup in a small heatproof, microwave-safe bowl. Microwave on HIGH (100%) for 20 seconds or until runny. Tint green with food colouring. Spoon mixture into a snap-lock bag. Snip off one corner. Working quickly, pipe mixture around the inside top of eight 1 cup-capacity glasses. Stand for 1 minute or until mixture starts to run down the inside of each glass. Refrigerate for 5 to 10 minutes or until set.
  3. Add pineapple juice to jelly mixture. Stir to combine. Just before serving, divide juice between glasses. Serve immediately.
