Raise your glasses to this cheery cocktail.

  1. Place sugar in a bowl, add 125ml (1/2 cup) boiling water and stir to dissolve sugar. Add lychees and mandarins, and leave to cool. Using a muddling stick or wooden spoon, crush fruit slightly, stir in lemon juice, then divide among 6 tall glasses.
  2. Pour 60ml vodka into each glass, stir, then fill with crushed ice and serve.
