If youre looking for something to sip while you feast on Brazilian fare, this lime and coconut caipirinha is what you need. Plus its a super easy cocktail to make.
- Place sugar, mint and 1/2 the lime wedges in a 1.5-litre-capacity jug. Using the end of a wooden spoon or rolling pin, pound the mixture until the mint and lime are crushed and sugar has dissolved.
- Add rum and soda water to jug. Stir well to combine.
- Divide ice and remaining lime wedges among serving glasses. Add rum mixture. Serve topped with mint sprigs.
