A homemade cordial that combines raspberries and ginger for a refreshing drink - just add water.

  1. Stir the raspberries, sugar and lemon juice in a small saucepan over medium heat for 5 mins or until the sugar dissolves. Increase heat to high and bring to the boil. Reduce heat to medium-high and simmer for 2 mins. Strain through a fine sieve into a bowl.
  2. Finely grate the ginger, then squeeze to extract 3 teaspoons ginger juice. Stir into raspberry syrup until combined. Store in a jar or bottle.
  3. To serve, pour a little cordial into each glass and top up with still or sparkling water. Serve with ice cubes and mint sprigs.
