For the perfect Christmas gift or summer cool down drink try this refreshing, alcohol-free raspberry and lemon cordial.

  1. Combine 500g fresh or frozen raspberries, 1 cup (220g) caster sugar, 2 teaspoons finely grated lemon rind, and 1 cup (250ml) lemon juice in a pan over medium heat. Cook, stirring, for 5 mins or until sugar dissolves. Strain.
  2. Return to pan and bring to boil. Cook for 2 mins or until syrup thickens.
  3. Pour into a Coles Cook & Dine Glass Bottle with Ceramic Lid. Chill.
  4. To serve, pour a little cordial into glasses and top with chilled sparkling mineral water.
