This Chinese-inspired dish is given a lovely sticky-sweet texture thanks to plum jam.
- Heat oil in a heavy-based saucepan over medium-high heat. Cook pork, in batches, 5 minutes or until browned. Transfer to plate.
- Add garlic and ginger to pan. Cook, stirring, for 1 minute or until fragrant. Add wine. Cook for 1 minute or until reduced. Return pork to pan with jam, stock and star anise. Simmer, uncovered, for 1 hour 30 minutes or until sauce is thick and pork is tender. Discard star anise. Stir in soy. Season.
- Sprinkle pork with coriander. Serve with rice and snow peas.
