Slow-cooked spicy pork

Cooking Meat Slow-cooked spicy pork

Serve this spicy tender pork with rice for an authentic Mexican meal.

  1. Heat 1 tablespoon oil in a large flameproof, heavy-based casserole dish over medium-high heat. Cook pork, turning, for 5 to 7 minutes or until browned all over. Transfer to a plate.
  2. Heat remaining oil in dish. Add onion. Cook, stirring, for 5 minutes or until softened. Add garlic, cumin, coriander, paprika, chilli powder, cinnamon and cloves. Cook, stirring, for 1 minute or until fragrant. Add tomatoes and 1 cup cold water. Bring to the boil.
  3. Return pork and any juices to dish. Cover. Reduce heat to low. Simmer for 2 hours, turning pork halfway during cooking. Add capsicum. Simmer for a further 1 1/2 hours, turning pork halfway during cooking, or until pork is tender and sauce is thick. Remove from heat.
  4. Carefully lift pork from sauce and transfer to a board. Using 2 forks, shred pork. Return pork to sauce. Return to heat. Simmer, uncovered, for 30 minutes. Season with salt and pepper. Serve.
