Please a crowd with this effortless one-dish pork roast with crisp golden crackling.

  1. Preheat oven to 230C. Pat the pork dry with paper towel.
  2. Combine sea salt flakes and pepper in a small bowl. Rub over the pork rind and into the cuts. Place 3 thyme sprigs and pork, rind-side up, in a roasting pan. Roast for 30 mins or until rind starts to crackle.
  3. Reduce oven temperature to 180C. Roast for 1 hour. Add potato, pear, remaining thyme, garlic and stock to the roasting pan. Roast for a further 1 hour 40 mins or until pork is cooked through and potato is tender. Cover with foil and set aside for 20 mins to rest.
  4. Arrange potato mixture on a large serving platter. Top with pork. Serve with salad and extra thyme sprigs.
