Pop a few ingredients in your slow cooker and come back later to a no-fuss pork roast for Christmas.
- Heat half the oil in a frying pan over medium-high heat. Cook onion and garlic for 3 to 4 minutes or until onion has softened. Place onion mixture in a bowl. Add lemon rind, sage, breadcrumbs and egg. Stir to combine. Season with salt and pepper.
- Place pork on a chopping board. Cut lengthways without cutting all the way through. Open pork out. Press on stuffing. Fold over to enclose stuffing. Tie with kitchen string at 3cm intervals to secure.
- Heat remaining oil in a large frying pan on medium-high heat. Add pork. Cook, turning, for 8 minutes or until pork is browned. Place in the bowl of a 5 litre slow-cooker. Cover. Turn slowcooker on high. Cook for 4 hours or until tender and cooked through. Slice. Serve with mash, lemon wedges and sage leaves.
