Serve pork skewers with spiced cracked wheat salad for a delicious and healthy family dinner.
- Combine the orange juice, fresh coriander, ground coriander and honey in a bowl. Place the pork in a glass or ceramic bowl. Add half the orange juice mixture. Toss to coat. Cover and place in the fridge for 30 minutes to marinate.
- Meanwhile, place the cracked wheat in a large heatproof bowl. Cover with boiling water. Set aside for 20 minutes or until tender. Drain in a fine sieve. Use the back of a spoon to squeeze out excess moisture. Transfer to a clean bowl.
- Cook the beans in a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. Add beans, onion, craisins and remaining orange juice mixture to the cracked wheat. Stir to combine.
- Thread the pork onto skewers. Preheat a chargrill on medium-high. Spray with olive oil spray. Cook the skewers on grill for 2-3 minutes each side or until light golden.
- Divide the salad among serving plates. Top with the pork skewers and sprinkle with the pistachio to serve.
