- Combine the rice wine, hoisin sauce, chicken stock, sesame oil, garlic, star anise, ginger, cinnamon sticks and brown sugar in a ceramic dish. Put pork into this marinade, cover the dish and refrigerate overnight.
- Preheat oven to 160°C. Place a wire rack in a roasting pan. Remove pork from marinade, reserving marinade. Place pork on rack and pour half cup of water into the roasting pan.
- Cook for 1 hour, basting with reserved marinade every 30 minutes. Turn pork over and cook, basting every 30 minutes with pan drippings, for a further 60-90 minutes, or until very tender. Transfer meat to a chopping board. Stand for 10 minutes, before slicing thinly.
- Meanwhile, place remaining marinade in a saucepan. Add apricots and place over medium heat. Bring marinade to the boil. Reduce heat to low and simmer for 20-25 minutes or until fruit is tender and beginning to break up.
- Spoon fruit sauce over slices of pork and serve with steamed rice and steamed Asian greens.
