Cooking Meat New England seafood casserole

Atlantic coastal states celebrate their ocean location with delicious seafood dishes such as this one, flavoured with aromatic herbs.

  1. Heat the oil in a saucepan over medium heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the tomato, stock, thyme, bay leaves and chilli. Cover and bring to the boil.
  2. Uncover and reduce heat to medium. Simmer for 10 minutes or until the tomato mixture thickens slightly.
  3. Add the fish and prawns to the tomato mixture. Simmer for 4 minutes or until almost cooked through.
  4. Add the marinara mix. Simmer for 2-3 minutes or until the seafood is just cooked through. Season with salt and pepper. Serve immediately with the Chilli Cheese Mash (see related recipe).
