  1. Peel outer layer from lemon grass and trim ends. Place prawns, fish, soy, lime juice, sugar, ginger and coriander into the bowl of a food processor. Process until seafood is minced and ingredients are well combined. Remove to a bowl.
  2. Divide mixture into 8 even portions. With wet hands, mould each portion into a sausage shape around each stick of lemon grass. Place skewers onto a tray. Cover. Refrigerate for 20 minutes.
  3. Preheat a flat barbecue plate or non-stick frying pan on medium-high. Spray each seafood stick with oil. Cook, turning often, for 5 to 7 minutes, or until golden on all sides and cooked through. Serve with lime wedges.
