Pistachio pesto is a versatile accompaniment to many meals. In this recipe we have paired it with lamb but it tastes equally good with pasta or chicken.
- Place the pistachios, breadcrumbs, lemon rind, garlic, parmesan, basil and 100ml olive oil in a food processor and process to a paste. Season with salt and pepper.
- Heat a chargrill to high, brush the cutlets with the remaining oil and chargrill for 1-2 minutes each side. Serve with the pistachio pesto.
