Cooking Meat Lamb cutlets with pistachio pesto

Pistachio pesto is a versatile accompaniment to many meals. In this recipe we have paired it with lamb but it tastes equally good with pasta or chicken.

  1. Place the pistachios, breadcrumbs, lemon rind, garlic, parmesan, basil and 100ml olive oil in a food processor and process to a paste. Season with salt and pepper.
  2. Heat a chargrill to high, brush the cutlets with the remaining oil and chargrill for 1-2 minutes each side. Serve with the pistachio pesto.
