Create authentic laksa at home with this simple recipe.

  1. Place the noodles in a heatproof bowl. Cover with boiling water. Soak for 5 minutes until tender. Drain.
  2. Meanwhile, heat the oil in a saucepan over a medium-high heat. Add the laksa paste and chicken. Stir-fry for 3 minutes.
  3. Add the coconut milk and 2 1/2 cups (625ml) water. Bring to a simmer. Simmer for 5 minutes, adding the broccolini stems in the last 2 minutes and the florets in the last 1 minute.
  4. Divide the noodles among serving bowls. Ladle the liquid, chicken and broccolini over the noodles. Top with the bean shoots, coriander leaves and sliced chilli. Serve with lime wedges.
