This sensational fish dish pairs fresh blue eye cod with a zesty melon salsa.
- Steam potatoes in a large steamer over a saucepan of boiling water for 15 minutes. Season fish and place each fillet on a small piece baking paper. Place fish on potatoes. Steam potatoes and fish for another 15 minutes or until potatoes and fish are cooked.
- Meanwhile, combine melons with chilli, basil, oil and lime juice. Season and gently toss to coat.
- Place fish and potatoes on 4 serving plates. Spoon over melon salsa and drizzle with extra oil if you like.
