A quickie is a shortcut pickle. In this recipe the cabbage and carrot are pickled in vinegar, oil and salt.

  1. Place cabbage and carrot in a large glass or ceramic bowl.
  2. Add vinegar, oil and salt. Toss until well combined. Stand for 30 minutes, tossing occasionally to allow cabbage to soften.
  3. Add radish and coriander to cabbage mixture. Season with pepper. Toss to combine.
  4. Serve with roast pork.
