Cooking Vegetarian Antipasto roll-up

Heres a tasty vegetarian lunchbox idea which combines full antipasto flavours with smooth feta cheese.

  1. Spread pesto over bread sheets. Arrange rocket in a row along 1 edge of each sheet. Top with eggplant, mushrooms, artichoke and tomatoes. Crumble feta over vegetables.
  2. Roll up firmly to enclose filling. Secure rolls with kitchen string. Cut in half and serve.
