Curried vegetable pilaf

Cooking Vegetarian Curried vegetable pilaf

For hearty vegetarian fare in a hurry, whip up this spicy pilaf.

  1. Heat oil in a large saucepan over medium-high heat. Add onion. Cook, stirring occasionally, for 5 minutes or until lightly browned. Add curry paste. Cook for 1 minute or until fragrant.
  2. Stir in rice to coat. Add coconut milk and 1 cup cold water. Bring to the boil. Cover. Reduce heat to low. Cook for 15 minutes or until the liquid has been absorbed. Stir in vegetable mix. Set aside, covered, for 5 minutes to steam.
  3. Stir in half the coriander. Divide between serving bowls. Sprinkle with remaining coriander. Serve.
