A portable vegetarian treat that tastes great served cold.
- Heat an oven grill to hot. Heat 1 tablespoon olive oil in a large non-stick frying pan over medium-low heat. Add potato and onion. Cook for 5 minutes or until potato and onion start to soften. Add garlic and cook for a further minute.
- Whisk eggs with milk, oregano, salt and cracked black pepper in a medium bowl. Pour into pan. Reduce heat to very low and cook frittata for 8-10 minutes or until half set.
- Sprinkle over goat's cheese and cook for 5 minutes. Remove from stovetop and place under the grill for 3-4 minutes or until surface is fully set and golden. Serve frittata with a simple salad.
