Cooking Vegetarian Fried zucchini and cauliflower with walnut sauce

Vegetables neednt be boring when they are dressed in this delicious walnut sauce.

  1. Quickly dip the bread into a bowl of cold water. Use your hands to squeeze out excess water. Place bread in the bowl of a food processor with walnuts and garlic, and process until well combined. Add oil and vinegar, and process until smooth. Season with salt and pepper.
  2. Heat oil in a large deep frying pan over medium-high heat (to test if oil is ready, a cube of bread turns golden brown in 10 seconds). Shallow fry one-third of zucchini for 3-4 minutes or until golden brown. Use slotted spoon to transfer to a plate lined with paper towel. Repeat in 2 more batches with remaining zucchini, reheating oil between batches.
  3. Reheat oil over medium-high heat and shallow fry one-third of the cauliflower florets for 3 minutes or until golden brown. Use slotted spoon to transfer to a plate lined with paper towel. Repeat in 2 more batches with remaining cauliflower, reheating oil between batches.
  4. Just before serving, combine the cauliflower and zucchini in a large bowl. Drizzle with the walnut sauce and gently toss until well combined.
