An everyday winning recipe of roasted potato wedges with the delightful tang of lemon juice and garlic.
- Preheat oven to 150C/130C fan-forced.
- Peel potatoes and cut into wedges. Place in a large roasting pan. Sprinkle with garlic and oregano. Pour over oil, lemon juice and 1/2 cup cold water. Season well with salt and pepper.
- Roast for 1 hour, turning potato halfway through cooking.
- Increase oven temperature to 200C / 180C fan-forced. Roast potato for 15 to 20 minutes or until tops of potato wedges are golden and crisp. Serve.
