Celebrate Christmas Day in true Aussie style with this roasted potato salad inspired by the bush.

  1. Preheat oven to 180°C/160°C fan-forced. Lightly grease a large baking tray.
  2. Combine potatoes, garlic and 2 tablespoons oil on prepared tray. Roast for 20 minutes or until garlic is tender. Remove garlic from oven. Roast potatoes for a further 20 to 25 minutes or until tender.
  3. Squeeze garlic from skin into a small bowl. Discard skin. Add lemon juice, mustard and remaining oil. Whisk to combine. Thickly slice warm potatoes. Place potatoes in a large bowl. Add chives and garlic mixture. Toss gently to combine. Serve.
