Cooking Vegetarian Broad beans with mixed herbs

Broad beans always make a salad look look fresh and exciting.

  1. Place broad beans in a large heatproof bowl. Pour over boiling water to cover. Set aside for 5 mins, to soak. Peel and discard skins.
  2. Mix together oil, vinegar and shallot in a bowl. Add peeled broad beans and toss to coat. Transfer to a serving plate. Scatter over herbs and goat's cheese.
