Cooking Vegetarian Roast sweet potato with Cajun-spiced butter

Roast sweet potato whole for this southern-style side, then team with barbecued meat.

  1. Preheat oven to 200°C. Spray the sweet potatoes with oil. Wrap each sweet potato in foil. Place on an oven tray and roast for 45 minutes or until tender.
  2. Process the butter and milk in a food processor until soft and pale. Add the seasoning and process until well combined.
  3. Use a small sharp knife to make a slit lengthways in the top of each sweet potato. Fill with the butter mixture and top with coriander sprigs.
