Cherries, herbs and a splash of tangy balsamic makes for a delicious, fresh relish.
- Cut the cherry halves in half and place in a bowl.
- Add the oil, shallot, mint, parsley, vinegar, sugar and salt. Season with pepper and toss to combine. Set aside for 15 minutes to develop the flavours.
