Rhubarb & ginger relish

Cooking Vegetarian Rhubarb & ginger relish

This rhubarb relish is perfectly paired with meat or chicken.

  1. Combine the rhubarb, onion, vinegar, sugar, ginger, cinnamon, allspice and cloves in a large saucepan over medium heat. Cook, stirring occasionally, for 30 minutes or until relish thickens. Taste and season with salt and pepper.
  2. Remove from heat and set aside for 1 hour to cool. Transfer to a small bowl to serve.
