Cooking Vegetarian Fruit mince cake

Christmas is not the same without a rich, fondant covered fruit cake.

  1. Preheat the oven (not fan-forced) to 170°C. Grease and line the base and sides of an 18cm square cake pan.
  2. Place 2 eggs, milk, fruit mince, brandy, sugar and vanilla in a bowl and stir to combine. Add mixed fruit and nuts, and sift in flour and baking powder. Stir until well combined, then place in prepared pan and bake for 1 hour and 10 minutes - if the cake is browning too quickly, loosely cover with foil. Remove from oven and cool in pan for 5 minutes, then turn out on a wire rack to cool completely.
  3. Warm jam in microwave, then brush all over cake to help almond paste stick.
  4. Dust workbench with a little icing sugar and roll out almond paste to a square large enough to cover top and sides of cake. Place over cake, trim excess and smooth down using hands. Brush almond paste with eggwhite. Dust bench with a little more icing sugar and roll out fondant. Mould over cake and trim edges and base so that icing fits snugly. Place cake on serving plate, tie with ribbon and open out flowers to decorate top and sides.
