Carrots with balsamic glaze and roasted hazelnuts

Cooking Vegetarian Carrots with balsamic glaze and roasted hazelnuts

Get into hot water the good way by using a healthy cooking technique to create this fabulous side!

  1. Cut large carrots diagonally into 5mm-thick slices. Place carrots in a metal steamer. Place steamer over a large saucepan of simmering water. Cook, covered, for 7 to 8 minutes or until tender.
  2. Place vinegar and sugar in a small saucepan over medium heat. Cook, stirring, for 1 to 2 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to low. Simmer for 5 minutes or until reduced by half. Transfer carrots to a bowl. Drizzle over balsamic mixture. Season with salt and pepper. Sprinkle with hazelnuts. Serve.
