Cooking Vegetarian Zucchini and peas with lemon breadcrumbs

Get into hot water the good way by using a healthy cooking technique to create this fabulous side!

  1. Place zucchini and peas in a metal steamer. Place steamer over a large saucepan of simmering water. Cook, covered, for 3 to 4 minutes or until tender.
  2. Meanwhile, heat oil in a small frying pan over medium heat. Add garlic, lemon rind and breadcrumbs. Cook for 3 to 4 minutes or until breadcrumbs are golden. Transfer vegetables to a bowl. Add mint. Toss to combine. Sprinkle with breadcrumb mixture. Serve.
