Cooking Vegetarian Coffee pecan streusel cake

  1. Preheat oven to 180°C/160°C fan-forced. Grease a 22cm round fluted ring pan.
  2. Make streusel Place flour and sugar in a bowl. Rub in butter until mixture resembles breadcrumbs. Stir in coffee, pecans and honey until combined. Set aside.
  3. Using an electric mixer, beat butter, sugar and 1/3 cup honey until light and fluffy. Add eggs, 1 at a time, beating until combined (mixture may curdle). Stir in half the flour and half the milk until combined. Stir in remaining flour and milk.
  4. Spread one-third of batter in prepared pan. Top with half the streusel. Spread with half the remaining batter. Sprinkle with remaining streusel. Spread with remaining batter. Bake for 1 hour 10 minutes or until a skewer inserted in centre of cake comes out clean (cover cake loosely with foil if over-browning during cooking). Stand in pan for 5 minutes. Turn out onto a wire rack to cool.
  5. Place remaining honey in a microwave-safe bowl. Microwave on HIGH (100%) for 30 seconds to 1 minute or until honey has melted. Drizzle over cake. Serve cake warm or cold.
