Crunch those croutons! This warm bacon and avocado salad is ready in under half an hour.
- Preheat oven to 200°C. Place cubes of bread on a baking tray and bake for 10 minutes or until they are golden and crispy, turning once during cooking.
- Heat a frypan over medium-high heat. Add bacon and cook for 3 to 4 minutes or until golden and crisp. Drain on paper towel and keep warm.
- Tear lettuce into bite-sized pieces and place on 4 serving plates. Top with tomatoes, avocado, bacon, and croutons. Season with salt and pepper.
- To make dressing: Whisk together oil, red wine vinegar, and Dijon mustard. Pour dressing over salad and serve.
