This healthy salad is given a springtime twist with the sesame soy dressing.
- Place the snow peas in a medium heatproof bowl. Cover with boiling water and set aside for 1 minute or until bright green and tender crisp. Refresh under cold running water. Drain well.
- Add the carrot, snow pea sprouts, green onions and micro herbs to the snow peas and gently toss to combine.
- To make the sesame soy dressing, place the tahini in a small jug and, while stirring, gradually add the lemon juice. Add the soy sauce, sugar and sesame seeds and whisk until well combined. Drizzle over the salad and gently toss to combine. Add the trout and toss to combine.
- Divide salad evenly among serving plates and serve immediately.
