Pine nuts add a gourmet crunch to this sensational barley salad.
- Place barley in a saucepan with 1.5L (6 cups) boiling water. Simmer for 25 minutes or until just tender.
- Rinse under cold water, then drain.
- To make dressing, place all ingredients in a screw-top jar and shake well.
- Place pine nuts, olives, tomatoes and rocket in a large bowl with barley.
- Add dressing, toss to combine. Serve in bowls, top with feta and season with salt and freshly ground black pepper.
