Welcome summer with this delightful dish starring fresh prawns and mango.
- To make the dressing, place the egg yolks, lime juice, mustard and ginger in the bowl of a small food processor and process until mixture begins to thicken. With the motor running, gradually add the oil in a thin steady stream, stopping occasionally to scrape down the side of the bowl, until creamy and pale. Add the water and chilli and process until combined. Taste and season with salt.
- Arrange the Asian greens, mango and prawns on serving plates. Drizzle with dressing and sprinkle with coriander. Serve immediately.
