This delicious Coconut poached chicken and jasmine rice salad is proudly brought to you by wowfood.guru and Sunrice.

  1. Combine the chicken, coconut milk and ginger in a medium saucepan over medium heat. Bring to a simmer. Reduce heat to low and cook, turning occasionally, for 10 minutes or until chicken is just cooked through. Remove from heat and set aside for 15 minutes to cool slightly. Transfer to a bowl. Cover with plastic wrap, place in the fridge for 1 hour or until cooled completely.
  2. Meanwhile, cook the Sunrice jasmine rice following packet directions. Set aside to cool completely.
  3. Combine the fish sauce, lime juice, brown sugar, chilli and sesame oil in a small bowl.
  4. Drain chicken from coconut milk and coarsely shred. Place in a large bowl. Add the rice, wombok, carrot, green onion, bean sprouts, mint and coriander leaves in a large bowl. Add the dressing and gently toss to combine. Divide among serving plates. Sprinkle with sesame seeds to serve.
