This aromatic broth is ready in minutes.
- Place chicken stock, soy sauce, ginger and garlic in a saucepan and bring to the boil over high heat. Reduce to medium and add corn and mushrooms. Cook, stirring occasionally, for 3 minutes.
- Add the dim sims and cook for a further 3 minutes or until the dim sims are heated through.
- Stir in bamboo shoots, baby bok choy, snow peas and half the shallots. Cook for 1 minute or until bok choy just wilts. Remove from heat. Taste and season with salt. Serve in noodle bowls sprinkled with the remaining shallots.
