A bottled pasta sauce as the base for this soup adds a delicious richness and flavour!
- Heat oil in a large heavy-based saucepan over medium heat. Add bacon. Cook, stirring, for 5 minutes or until golden. Add pasta sauce, consomme and 1 1/2 cups cold water. Bring to the boil. Reduce heat to low. Simmer for 5 minutes.
- Add beans, vegetables and risoni. Season with salt and pepper. Simmer, stirring occasionally, for 15 minutes or until risoni is tender.
- Meanwhile, heat a large non-stick frying pan over medium heat. Cook garlic bread, turning, for 6 to 8 minutes or until golden and heated through.
- Serve minestrone topped with garlic bread and parsley.
