Spinach found fame as Popeyes favourite food, and he was onto something - its full of healthy goodies. Whats more, this versatile leafy green works in everything from stir-fries to soups.

  1. Cook the spinach in a saucepan of salted boiling water for 2 minutes. Drain. Place in a tea towel and wring to remove excess moisture. Finely chop.
  2. Heat butter in a large frying pan over medium-high heat until foaming. Add the garlic and cook for 2 minutes. Add the cream. Reduce heat to medium. Cook for 5 minutes. Add the spinach, parmesan and nutmeg. Season with salt and pepper. Cook for 5 minutes or until the sauce reduces and thickens. Serve.
