Cooking Eggs Egg and lettuce cups

This eye-catching starter looks terrific but is super easy to prepare.

  1. Place eggs in a saucepan and cover with cold water. Bring to the boil over high heat. Cook for 4 minutes. Drain and cover with cold water. Set aside to cool. Peel. Place in a bowl. Use a fork to mash. Stir in mayonnaise and curry powder, if desired. Arrange baby cos lettuce leaves on serving plates. Spoon in the egg mixture. Serve.
