- Combine water and palm sugar in a saucepan over low heat and cook, stirring, until sugar dissolves. Increase heat to medium-high and bring to a boil. Reduce heat to medium and simmer, without stirring, for 10 minutes or until syrup reduces by one-third. Remove from heat and set aside for 5 minutes to cool. Pour into a heatproof jug and place in fridge for 1 hour to chill.
- Use a sharp knife to peel the grapefruit and remove the white pith. Cut in half and remove seeds. Cut each half into 1cm pieces. Place a third of the grapefruit in a large mortar and pestle and gently pound until crushed. Transfer to a jug. Repeat with remaining grapefruit.
- Add the palm sugar syrup, vodka and mint leaves to the grapefruit and stir to combine.
- To serve, place the crushed ice, about 3cm deep, in the base of six tumbler glasses.
- Pour the grapefruit caipiroska over the ice and serve immediately.
